What is A Culinary Arts and Management (AAS) Degree?

The Culinary Arts/Management field is about the preparation, cooking, and presentation of food and the management of the whole process.  The “art” is in creating edible dishes that are both pleasing to the eye while also being pleasing to the taste buds.  The “science” of the field is to store and prepare foods so that they are safe to eat and are combined in ways to bring out the best in each ingredient.

In an Associate’s degree in Culinary Arts program you learn all the basics of food prep and storage and the running of a food establishment.  You’ll even get a smattering of international cuisine, and some pointers on managing the operation.  Plus, you’ll get some important work experience in a practicum or in hands-on courses to prepare you to get a good entry-level job in the food industry.  As you gain experience, you’ll be able to work up in the kitchen to more specialized food preparation and management.

The video below discusses a “typical” program, so it should help regardless of which school you are considering.
